We were recently asked to come up with a recipe for a local Bay Area magazine. The challenge was to create a healthy "comfort food" dish the whole family could enjoy.
We came up with this Whole Grain Bowl reci-pea which has all of the characteristics of any comfort food: easy to eat, east to digest, soft consistency, and leaves you satisfied! We love them so much they have now moved into our weekly lunch rotation here at Peas HQ!
Whole Grain Bowl
• Whole grain of your choice: brown rice, quinoa, barley• black beans, drained
• avocado diced
• diced scallions
• salsa
• diced black olives
• shredded cheddar cheese
• large dollop of Whole Grain Sauce
Whole Grain Sauce• 1 C of garbanzo beans
• 1/4 C slivered almonds
• 2/3 C tofu
• 3 cloves of garlic, minced
• 1/2 C water
• 3 TBL lemon juice
• 1/3 C parmesan cheese
• 1/2 tsp salt
• 1 TBL curry powder
• 1 TBL dried basil
To make the sauce, blend all ingredients together in a food processor until smooth.
Next, put each ingredient in its own container and let your family build their own bowl.
Start with the brown rice, then add the black beans, and top with the rest of the ingredients followed by a large dollop of Whole Grain Bowl Sauce.
