Oh Summertime, how we’ve been longing for your visit! And how nice of you to have brought us delicious fruits like cherries, nectarines, plums, and peaches!
When summer brings you fruit, we say, “Make ice cream sandwiches!!” Hey, why not? It’s a wonderful summertime treat, and is the perfect ending to a family BBQ. Of Peas of Mind isn’t going to make just any ice cream sandwiches, we’ve added some tasty, healthy twists.
Peach-Carrot Cobbler Ice-Cream Sandwiches
(Yield depends on how big you want your cookies)
Peach-Carrot Cobbler Cookies
1 ½ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
¼ tsp ground nutmeg
1 ¼ cup butter (2 ½ sticks) room temperature
¾ cup firmly packed brown sugar
½ cup granulated sugar
1 large egg
1 tsp vanilla
¼ cup pureed peach (about 1 peach)
¼ cup pureed carrot (about 1 large carrot)
3 cups Quaker oats (quick or old fashion, don’t use instant)
Preheat oven to 375F
In a medium bowl, thoroughly stir together flour, baking soda, cinnamon, salt and nutmeg.
In a mixing bowl, using high speed of an electric mixer, cream butter and both sugars until light and fluffy. Beat in egg and vanilla. Beat in carrot and peach puree.
By hand, stir in the flour mixture. When flour is absorbed stir in the oats.
Drop large tablespoons onto an ungreased cookie sheet. Cook for 8 – 9 minutes until lightly golden.
These cookies are slightly cakelike which makes for the perfect “bun” to your ice cream flavor of choice (we suggest vanilla bean!) The kids can help make ice cream in a Ziplock bag! Check it out on our website: www.peasofmind.com/recipes.
