Baked Sweet Potato Donuts - FAT FREE!

We've outdone ourselves this time, we've created a fat free, baked vegetable donut made with sweet potatoes. Yes, a vegetable donut! The inspiration for this month’s reci-pea is Father's Day. We are dedicating this reci-pea to the father of our Marketing Manager, Kelly Walsh. Kelly's dad has a sweet tooth, but not for sweet potatoes. She teases her dad frequently saying, "Dad, who doesn't love sweet potatoes?" They're the greatest vegetable on earth; naturally sweet, slightly starchy, and you can prepare sweet potatoes in so many ways. Best of all, sweet potatoes are super high in antioxidants (vitamins A & C) and contain vitamin B6 that helps to maintain healthy blood sugar levels.

Baked Sweet Potato Donuts:

  • 1 3/4 cup flour
  • 1/2 of one large sweet potato (peeled, cut, boiled and mashed)
  • 1/4 cup brown sugar
  • 1/4 cup regular sugar
  • 1/4 cup apple sauce
  • 1 tsp cinnamon
  • 1 tsp baking poweder
  • 1/2 tsp baking soda
  • pinch of salt

Cinnamon Sugar Sprinkle:

  • 2 Tbl melted butter
  • 1 tsp cinnamon
  • 2 Tbl sugar

Preheat oven to 350F. In a medium bowl, mix the mashed sweet potato and applesauce together until combined. Using a stand-up mixer, and a paddle attachment, mix together all dry ingredients. Then add the sweet potato and applesauce mixture to the dry ingredients. Mix on low for 10 seconds and then move to high for about 30 - 45 seconds or until all ingredients are combined to form a dough. The dough will be slightly sticky.

Prepare a well-floured surface. Gently, kneed the dough a couple of times to incorporate a bit more flour. Using a rolling pin, roll out the dough to about a ½ inch thickness. Use two round cookie cutters, (one large, one small) to form the donut shape. Gently place uncooked donuts onto a greased cookie sheet. Bake for 6-9 minutes (Do not over cook.) For the Cinnamon Sugar Sprinkle, combine the cinnamon and sugar together in a bowl. When donuts are out of oven brush each with melted butter and sprinkle with cinnamon-sugar mixture.

What's Your Favorite Food?

A classic question to ask a new friend, a new date, even old friends and family. What is your favorite food? I've contemplated a coffee table book that discusses that question alone. I believe you can learn a lot about a person from their response. In addition you would probably end up collecting quite a lot of unique family recipes. Oftentimes, when you allow someone to think really hard about their favorite food, they usually say something along the lines of, "Oh, my mom's lasagna is the BEST!" So, the coffee table book would a compilation of fun recipes along with the personal photos celebrating our favorite foods! Cute right?

So, what is your favorite food? Send us antidotes, recipes, photos and we'll display them right here on our blog and who knows, maybe one day they'll be a coffee table book too!

Candied Lemon Peels!

Peas of Mind is based out of San Francisco, California. Although, there are times we miss the seasons of the Midwest and East Coast, there is one thing that we never get sick of-amazing fresh produce!

We are very lucky to have some of the best fruits, vegetables and nuts growing, literally, in our own backyard. Last week a friend of ours was kind enough to deliver hand picked lemons from one of her trees, and of course we accepted with open arms.

We had so many lemons; we made lemon bars, lemonade, and our favorite was candied lemon peels. They are super easy, high in Vitamin C, and satisfies the sweet tooth without the artificial flavors and yucky high fructose corn syrup found in store bought candy.

  • 3 Lemons
  • 1 cup sugar (add a little extra for sprinkling)
  • 1 cup water

Using a vegetable peeler, peel the rind off each lemon in strips (from stem to bottom of lemon). Avoid the white part of the rind, called the pith, because this will make the candy bitter.

In a small saucepan, boil lemon rinds in water. Boil until the rinds are tender, about 15 minutes. Remove rinds, submerge in cold water for 2 minutes and pat dry with a towel.

While your lemon rinds are boiling, begin your candy mixture. Mix together 1 cup of sugar and 1 cup of water in a non-stick saucepan. Bring this mixture to a boil then add lemon rinds. Leave rinds in the mixture until they are translucent, about 10-15 minutes. Carefully remove rinds with tongs and set them on a plate to cool. Sprinkle a little raw sugar on top for texture, and allow the lemon peels to cool for about 2 hours. these little gems are fantastic on top of frozen yogurt, which of course, is sitting on top of a piping hot Banana Puffet!

Peas Visitor of the Week!


We've been lucky enough to have a wonderful little gem with us for the week. She's been keeping us smiling and our laps warm. It's amazing what a little puppy love can do to warm things up a bit. Here's little Yum Yum, turns out she's a fan of healthy food for kids too :) Thanks for letting us keep her for a bit Mercer!
