Forbidden Rice Krispy Squares

We have already created a healthier version of the Rice Krispy, called Kamut Krispies, but we wanted to recreate this American classic yet again using another ancient grain, Forbidden Rice or Black Rice due to it's amazing health benefits!

We turned to the rice experts, Lotus Foods, to learn why Forbidden Rice is so healthy. Apparently, this “ancient grain was once eaten exclusively by the Emperors of China” to increase health and longevity; and new studies show that “10 spoonfuls of cooked black rice contains the same amount of antioxidants as a spoonful of fresh blueberries”!

Now you know what you will be making for your child's next bake sale!

Forbidden Rice Krispy Squares
-3 cups of canola oil
-1 cup of Forbidden rice/black rice (will yield about 2 C of puffed rice)
-1/2 bag of mini marshmallows
-1.5 TBL butter

Spray an 8x8" baking pan with cooking spray. In a medium saucepan heat your oil over medium high heat. Add the rice and stir constantly. After about 25 seconds, the rice will begin to puff and the white insides of the grain will be exposed. Remove the puffed rice from the oil at this time and put on a paper towel to cool. Set aside 2 tablepoons of the puffed rice to sprinkle on the top of the squares.

Heat a large saucepan over medium low heat. Add butter and melt completely. Add marshmallows and stir constantly until they have melted. Add puffed rice (except for the 2 tablespoons that are set aside) and stir until combined. Take off heat and transfer rice mixture to your greased pan. Spread completely and sprinkle with remaining puffed rice. Let cool and enjoy!

Secret Veggie Cheese Crackers!

Homemade Cheddar Crackers!

When you’re on the go and trying to keep kids fed and occupied while running errands, waiting in line, or in a high chair, one of the go-to’s for moms everywhere are cheesey crackers. They might be shaped like fish, rabbits, or little squares, and boy do they do the trick! Downside is they aren’t cheap, and they often have loads of sodium, oil, preservatives, and dyes.

Well we decided to create our own and in classic Peas of Mind fashion, we added veggies! Just a little pumpkin puree we had on hand (though you could use carrot or sweet potato) gives the crackers an extra boost of vitamins that we can feel good about.

We created an easy, quick, cheddar cracker recipe with just a few whole ingredients. Instead of oil we used real butter; we shredded some sharp cheddar cheese and we used whole-wheat flour. The dough freezes beautifully, or you can cut them into your desired shapes and freeze them on a baking sheet. Once the little shapes are frozen, simple bag them up and they’re all ready to bake whenever you want them!

Equipment : Food processor, oven at 350o F

Ingredients :
2.5 cups whole-wheat flour
1 cup pumpkin puree
8 oz grated cheddar cheese
4 tbsp unsalted butter
1 tsp salt

Add all ingredients to the food processor and pulse until it forms a dough. Chill the dough in a plastic wrapped disc for 1 hour. Roll out the dough as thin as possible (less than 1/8th inch thick) between two lightly floured pieces of parchment. Take the top parchment off and leave the bottom parchment in place. Cut the dough into a grid using the tip of a pairing knife (to look like the classic cheese-it). Place the piece of parchment with your cut shapes on a sheet tray and put into the freezer for 5-7 minutes (this makes the crackers a breeze to simply flip over onto a fresh sheet of parchment). Line a sheet pan with parchment and flip dough onto the tray. Bake at 350o F degrees for 10 minutes, then watch closely as they go from perfect to…well done and remove from the oven when slightly browned. Let cool to crisp up! Keep in the fridge for up to 7 days.

Fun with Oranges

I came across a fun recipe on FamilyFun.com "Gelatine Oranges." This had a lot of potential for a healthy snack for kids. http://jas.familyfun.go.com/recipefinder/display?id=50510&cmp=NLC-NL_Recipe_042009_gelatin

The original recipe was simple:

Ingredients:

Oranges
Water
Orange Gelatin (or Jello)

1. Cut the oranges in half from top to bottom and spoon the fruit from each half, leaving the peel intact. Prepare the gelatin according to the package directions, then pour it into the peel halves, adding fruit pieces if desired.

2.
Set the halves into ramekins or a muffin tin to keep them from tipping and carefully place them in the refrigerator. Let the gelatin set according to the package directions.

3.
Once they're ready, remove the orange halves from the refrigerator, cut them into wedges, and serve.
But here's the problem, maybe you and your kids are vegan? You can't eat regular gelatin. AND why waste the actual orange, why not use it and make a natural, vegan gelatin. I did a little research, here's how you can adjust your recipe.

Ingredients:

4 Tbl agar agar (a natural, vegan gelatin made from seaweed)
1 Qt fruit juice (use the juice from the orange and add a little water)

1. Bring to a boil and then simmer for 5 mins.

2. Fill your orange halves as you would have above and chill.
